If variety really is the spice of life, then I am not very spicy this week. I guess my salads have all been a little different, but jeez, this is mucha ensalada.
Breakfast: TGIO (thank god it's oatmeal)! I only have one more serving left, so I better track down some more tonight. Today I was all out of berries, so I added half a banana, Maranatha crunchy almond butter, and some coconut. Loving how easy unprocessed breakfast is. It makes me feel good about my normal diet!
And coffee! This is WF Mocha Java. Doesn't taste at all mocha-ish. I don't think it's actually flavored at all. But isn't my coffee clip cool? It's a clip/scoop all in one. I got it in Paris at the best home goods store ever. Although it looks like maybe I didn't need to travel so far...
I prepared some of my lunch last night, but this morning I still had to assemble my salad and jazz up my couscous.
Salad:
- the last of my arugula
- tuna salad (tuna, olive oil, whole grain spicy mustard, lemon juice)
- roasted beets
- capers
- red onion
- pumpkin seeds
Couscous:
- leftover couscous
- sesame oil
- chili powder (are spices, like spices from a spice rack, processed? yikes! hope not)
- cinnamon
- golden raisins
- slivered almonds
- pumpkin seeds
I also brought a hard-boiled egg with salt and pepper for a morning snack, which I needed, since I didn't get to lunch until almost 2.
When I was making my tuna salad last night, I kept reaching for things and realizing I couldn't use them... dijon mustard, honey mustard, canola oil mayo... I guess I could try making my own mayo if I were feeling really adventurous. We'll see how desperate I get. This is our refrigerator door... almost all processed.
This is the rest of the fridge. My shelf is the bottom one, with a dwindling population.
Going to an event after work and trying to figure out a plan so I don't get too hungry. There will be food there, but I'm guessing my options will be limited. I brought more fruit for PM snack, and then I have a yogurt with almonds and half a banana that I'll try to have ~late afternoon to hold me. I think I'm also going to need to track down a Larabar beforehand. Does anyone know if they have them at Duane Reade? Walgreens is right next to my office, but it's a totally useless store.
I feel badly about not exercising much this week, but my hacking cough is not going to get better at the gym. Thoughts on the challenge: Dessert is definitely still my main struggle. (I haven't even opened the freezer, because I think if I see my Ciao Bella chocolate sorbet I might lose all control.) The rest of the day is going pretty well! I am still craving bread a little, but I may buy some Ezekiel stuff, which is really minimally processed, if at all. It works for our standards! Cravings aside, I do feel good about the way I'm eating, and I think with time I'd forget about all the things I'm not eating.
